Greek Omelettes

I'm hoping to run one or two half marathons this fall, and realizing that its already almost halfway through September, I need to increase my mileage. This morning I got up and ran 8 miles. It was so beautiful outside; sunny, breezy, and just over 70 degrees. Perfect running weather!

When I got back I had my favorite post-run drink...chocolate milk! Its great because it has some protein and fat to immediately rebuild muscles.


I always think it tastes better when drank through a straw :)

And onto breakfast...after surveying the fridge, I found the makings for some Greek omelettes.

Ingredients:
  • Eggs (I used egg whites)
  • Tomatoes
  • Spinach
  • Broccoli
  • Reduced Fat Feta Cheese
  • Pam Spray

I also cut up a little fruit to have on the side of the omelette.

Peaches and Strawberries

Heat a pan on medium heat, then spray with Pam to coat. Add the eggs/egg whites, and once the cooking has begun (after about a minute) add some feta cheese so it gets nice and melty.


Chop up the tomatoes and broccoli into small pieces.


Add the tomatoes, broccoli and spinach to the egg.


Then add some more feta.


Fold the egg over and cook for another minute or so (you may need to hold it shut with a spatula so it molds together). Turn the heat down to low, and flip the omelette to cook on the other side for another minute or two, to assure that the veggies are cooked and the cheese is melty, but avoid overcooking the egg.


Then transfer to plate and dig in!


Now off to enjoy one of the last free Saturdays this fall. I think I'll probably head to a local farm or two to find some fresh things for dinner, maybe get an ice cream cone, too! And hopefully I'll fit in some other activities that aren't food-related haha.
