Crock Pot Chicken Cacciatore

Pat and I had some family over for linner (lunch/dinner) on Sunday and I made chicken cacciatore in the crock pot. I'd made this in a skillet before, but this was my first time using a crock pot - as expected it was quite easy and came out very well!

Pat called his dad for this recipe, and I made a few changes to the process and ingredients.

Crock Pot Chicken Cacciatore
(serves 10 with a lot of leftovers)

Ingredients
  • 5 pounds boneless skinless chicken breasts, cut into 1-inch pieces
  • 5 cloves garlic, minced
  • 1 tbsp Italian seasoning
  • 2 tsp dried basil
  • fresh basil
  • 2 cans (28 ounces) Pastene "Kitchen Ready" crushed tomatoes
  • 12 ounces mushrooms, cut into thirds
  • 2 large onions, chopped
  • 2 red and 2 green bell peppers, chopped
  • 1 cup red wine
  • 1/2 cup fat free reduced sodium chicken broth
  • 1/4 cup corn starch
  • 2 boxes pasta, cooked and drained
  • fresh Parmesan and Romano cheese, grated

Prepare your chicken and vegetables.

(I recently read that lighting a candle will stop you from crying when cutting onion - this didn't work for me!)

Put chicken, vegetables, garlic, Italian seasoning, dried basil, wine, and 1.5 cans tomatoes in the crock pot (reserve the remaining 1/2 can of crushed tomatoes to toss the pasta when cooked). Mix until everything is well coated.


Cook on low/high for 4-8 hours (this depends on the amount of food in your crock pot and how long you have before you need to serve it - my crock pot was completely full, so I cooked it on high for about 6 hours).

About 30 minutes before serving I added fresh basil to the crock pot. Wash, tear, and add.


Then in a small bowl, stir together chicken broth and corn starch until smooth. Add mixture to crock pot, stir in, and cook on high for another 10-15 minutes or until sauce thickens.


Linner is served!

Everyone said that they really liked this dish, and several people went back for seconds. So either it was a big hit or I just have very polite guests!

I Love Long Weekends

I think everyone will agree that long weekends are a wonderful thing. I didn't know that I had President's Day off of work until last Tuesday, so that was exciting news! I had a wonderful weekend - saw a lot of friends and family, got a lot accomplished, and still managed to have some serious lazy time.

Friday Night

1. Ran TONS of errands after work. 
Returns, exchanges, and purchases made at Babies R Us, Christmas Tree Shop, Burlington Coat Factory, and Hannaford's.

2. Had a delicious pasta dinner and discovered an amazing new way to eat broccoli (which makes me even more obsessed with it).

Steamed broccoli with marinara sauce and grated Parmesan cheese.

3. Met up with some friends, then made the obligatory candy stop on the way home.


Have you ever seen this many peeps?! I like to cut open the packaging and let the peeps get a little bit stale (so they're nice and chewy) before eating them.

Saturday

4. Went for a great run with Callie.

After the run I refueled with some chocolate milk, an orange, and an open-faced chicken salad sandwich.

Chicken salad - cut up grilled chicken breast mixed with 0% vanilla Chobani Greek yogurt, Dijon mustard, craisins, and fresh ground pepper. Put on piece of toast covered with a bed of baby spinach.

5. Helped celebrate Maddison's 1st birthday.

6. Went shopping with Pat and found some amazing deals at Nordstrom Rack.

7. Went to a surprise birthday for Colin's 30th. 

Colin was quite surprised and we had a great time! The party was at Pepperoncini's (in Framingham) and though it didn't look like much from the outside (read: thought it was probable that this could be a gang hang out and our car might be stolen/vandalized in the parking lot) the inside was a fun bar and restaurant - complete with my favorite game!

Sunday

8. Put together all ingredients for Chicken Cacciatore in crock pot.

 
9. Went to Krissy's Baby Shower.

BEAUTIFUL cake! Colton's room is decorated with a fishing theme, so this cake had a fishing boat, rod, and fish on it, and along the sides there were cattails, ducks, and candy rocks.
Party favors: little satchels of swedish fish tied with string and buoys. 
Gina, Kath, Krissy, Julia, Me, and Gerene (who's also pregnant!)

10. Had family over for LINNER (lunch/dinner).

There were 10 of us total: My mom, brother, brother's girlfriend, Pat's mom, brother, aunt, cousin, and  cousin's friend. And Pat and me. Since I knew I'd be spending the morning at Krissy's baby shower, I prepared the meal ahead of time and put it in the crock pot. We also delegated extras for other people to bring: my mom brought a salad, Pat's mom brought bread, and Pat's aunt brought brownies.

My mom brought mixed greens for the salad, and prepared some delicious toppings for people to add: roasted sweet potatoes, roasted peppers, and mozzarella cheese.


I'd never thought of having roasted sweet potatoes on a salad, but it was unbelievable! My mom also made a Maple Mustard salad dressing to go on top, which was delicious.

11. Went out with some friends.

Shortly after our family left, Pat and I had to rush out to meet up with some friends for dinner (hard to believe we had more food!) and hanging out.

Monday

12. Watched the entire first season of Mad Men.


Yes, you read me right. Pat and I watched the whole first season of Mad Men, basically in one sitting. Since we had such a busy weekend, all we wanted to do on Monday was relax. On Monday morning we discussed going out to breakfast, going to the gym, and going grocery shopping, and decided that those were the only things we'd leave the house for. I thought we should stay home for breakfast and put the gym and groceries off until later in the day. By the time we were a couple episodes into the first season, we decided that we didn't want to go anywhere, and even ordered delivery for dinner to avoid leaving the comfort of the couch.

The Joy of Running

I'm subscribed to Runner's World emails, which includes a daily email with different tips and articles, and another daily email with the Runner's World quote of the day. The quote of the day emails are sent around 1:30am, so when I turn on my phone in the morning I see that email as I start my day. The quotes  origin vary from elite athletes to commoners (us non-elites) but are usually very inspiring and motivating.

This morning Callie came down to Nashua to run with me. After the week of 60 degree days, this morning's 30 degree temperature with raging winds seemed cold. Despite the temperature, it was one of the best runs I've had in a long time. We ran eight miles at a comfortable pace and chatted, about running and many other things, while the wind howled around us. Sometimes all you need is to run by yourself and clear your mind, and other times all you need is a friend to run with. Callie and I hadn't run together in a few months and this morning I realized how much I missed running with her and how much fun it is. After about six weeks of disheartening runs on the treadmill, I found my joy of running again this week by running outside and running with a friend. I'd almost forgotten how amazing it is.

Now I need some chocolate milk, a shower, some lunch, and I'm off to Miss Maddison's 1st birthday party! Enjoy your Saturday!

TGIF!

Good morning and HAPPY FRIDAY! 

I'm in a particularly good mood this morning; partly because its Friday, and also because the weather has been amazing. How can you not be happy with the warm weather we've been having?


It was 61 degrees when I left work yesterday! They'd predicted that it would be in the 40s, but we got 60s! 

I went for a run before leaving work and for some reason my legs felt like lead. I've been pretty sore this week and I'm not sure why. I didn't really mind too much though, I was just so happy to be outside and enjoying the fresh air and the sunshine. I may sound like a hippy, but after the miserable winter we've had I've been dying to be outside.

After my run I drove up to Nash and hit the gym for back and bis. I think I've had good strength workouts this week because all of my muscles are tight. I like that feeling because it makes me feel like I'm getting stronger (I don't like prolonged tightness in my legs though, because that interferes with my running). I meant to spend some time with my foam roller when I got home and work on my leady leg muscles, but instead got distracted by a growling stomach. I made a piece of toast with peanut butter and a thick layer of unsweetened apple sauce on top and had a glass of skim milk on the side. Have you ever had toast with peanut butter and applesauce? It was my first time trying it and its so good! Peanut butter on apples is delicious, so peanut butter with applesauce seemed like the next logical snack.

I don't have any fun recipes to share with you about dinner last night (which just ended up being another piece of toast, some cereal, and dark chocolate - not the most balanced meal ever) - I spent the night doing laundry, cleaning my apartment, and wrapping baby gifts. This weekend is a busy one - tonight I need to get some grocery shopping done and then Pat and I are meeting up with some friends. Saturday will begin with a long run, followed by my good friend's baby's 1st birthday party, which will be followed by a friend's surprise 30th party (all in Massachusetts). Sunday begins bright and early with a 10am baby shower, followed by Pat and I having 10 people over for "linner" (lunch/dinner) at our place, followed by going out to dinner with some friends (all in New Hampshire). So busy! But its completely full with fun things, and now that I have the cleaning and most of the prep work done, I can enjoy the craziness instead of being stressed out. AND I have Monday off of work - which is perfect because that will be a day to relax and recharge before the work week begins!

Since I don't have any recipes for you today, I'll leave you with a random bit of information about me. This is a Bambi figurine I keep on my desk at work. 


It was a gift from Kathryn (one of my very best friends in the world). She has been calling me Bambi (or Bambs for short) for many, many years. I have no idea how I got the nickname, but I love that she calls me that, and having a Bambi on my desk makes me think of her (she lives down in Virginia) and makes me happy!

Risotto Cakes with Roasted Broccoli and Cauliflower

A nice thing about working from home one day a week is that my kitchen is only a few feet away from my office, and I have the freedom to make any meal I'm in the mood for. Yesterday I made a risotto cake and some roasted broccoli and cauliflower. Both were so easy to make and required no hands-on work - once you assemble the ingredients you just put it in the oven/on the stove and just check it every 10-15 minutes. So you can work while your meal cooks, tackle a sink full of dishes, or finally get around to putting away the Christmas presents that are still sitting in the living room...

The roasted broccoli and cauliflower has a longer cook time, so I started that first. Preheat the oven to 400 degrees, then cut and rinse about 2 cups each of broccoli and cauliflower.


Put the vegetables in a large oven-safe bowl and add a little olive oil and your flavors (I used paprika, cumin, cayenne pepper, ground ginger, garlic, lemon juice and rind, and honey). Toss to coat evenly.


Roast in oven for 35-40 minutes, stirring about every 10 minutes to ensure even roasting.



Roasted Broccoli and Cauliflower Ingredients
  • 2 cups each broccoli and cauliflower, rinsed and cut
  • 2 tsp olive oil
  • 1/2 tsp paprika
  • 1/4 tsp cumin
  • 1/4 tsp cayenne pepper
  • 1/4 tsp ground ginger
  • 1 clove garlic, minced
  • juice and rind from 1/4 lemon
  • 1-2 tsp honey

I came across the recipe for risotto cakes on about.com and thought it sounded like a great way to enjoy leftover risotto. You simply take some leftover risotto (should be day-old and chilled) and form it into a ball, then flatten it into a patty. I heated 1 teaspoon olive oil on a skillet over medium/medium-low heat and also sprayed some cooking spray. Place your risotto patty on the pan and cook for about 10-15 minutes, until the bottom is browned and crispy, then flip and do the same for the other side.

I used some of the leftover Valentine's Risotto.


And lunch is served!


This was great! I'm so glad I came across the risotto cake recipe because this adds another dimension to the deliciousness of risotto! It was crispy on the outside, but still soft on the inside, and tasted like it was fried, but I only used 1 teaspoon of olive oil for the whole cake! Aside from it falling apart a little bit (I didn't press the ball together enough before I started cooking) I'd say that the cake was a big success! The roasted vegetables were very good - definitely a nice change from steamed. You could really use any spices you want for the vegetables, I just grabbed a few different things that looked good to me and went with it.

I met Steph and Rachel at Border Cafe in Burlington for dinner. We had fun catching up while eating way too many chips with salsa.




Before any of us had our licenses in high school we would always take the train into Harvard Square on weekends, and Border Cafe was one of our favorite places to eat (probably because they give you big portions for little money). I always think of those times when I eat at Border Cafe now, and I think I still prefer the Harvard Square location to the Burlington restaurant.

I did a very surprising thing after dinner. I went to the gym! In a perfect world, I'd work out in the morning every day, but that usually isn't possible because of my work schedule. Most days I'll run or go to the gym after work - but never do I go to the gym after dinner. I don't like running soon after I've eaten, and I think nighttime is the least appealing time of day to exercise. But last night I was feeling a little guilty, since I didn't work out at all on Tuesday (I went out to dinner with Callie and Chrissy) and decided that I could probably squeeze in a quick trip to the gym. So I went home and changed, then headed back out to the gym.

I was finished with chest, tris, and some abs by 8:58, and rushed to a treadmill so I could start running when Modern Family started at 9. I did a short interval run - not as long/hard as I'd normally go for, but I also don't normally have 1/2 a bean and cheese burrito, chips and salsa, and a Dos Equis in my stomach. I did the following on the treadmill at a 1% incline:

Also - some news for marathon runners and marathon hopefuls. Check out this article my dad sent me this morning. Due to the increased participation in the Boston Marathon (26,736 ran last year in comparison with just 4,904 in 1986) the BAA has revised the qualifying times - they've dropped by 5 minutes in each category. Marathon Qualifying is Revised (from The Boston Globe).

Valentine's Day

I hope everyone had a nice Valentine's Day! Mine was filled with some of my favorite things - running, cooking, relaxing with Pat, and eating inappropriate amounts of chocolate. If Valentine's Day isn't an excuse to eat your favorite sweets then I'm not sure I understand the purpose of the day. I'm kidding! (sort of). The purpose of the day, to me, is a great reminder to go out of your way to tell people you love them. Be as corny as you like!

Before leaving work I went for a run (loving running outside this week!) down to and around Jamaica Pond. It was supposed to be 40 degrees, but it got all the way up to 55 degrees! It was so nice I could have worn shorts and a t-shirt. Long sections of sidewalks were still covered in snow and ice, but most of the trail around Jamaica Pond was cleared, and lots of sand and salt had been put down where there was snow left on the trail. Even though it still looks like winter, it felt like spring (and that's the most important thing to me).




After my run I got on the road for a couple Valentine's deliveries. I made plates of cookies, brownies and cupcakes for my mom and dad and brought them to their houses.

Then I headed home to make a nice dinner with Pat. We prefer to stay in on Valentine's Day and cook together. Well actually, every year he has cooked for me (he's an amazing cook) but this year I cooked with him, which was a lot of fun.

On the menu: filet mignon with mushroom wine sauce, cheese risotto, sauteed spinach and garlic, and beets. 



Do you like the pink Valentine's risotto? I colored it with some of the water we boiled the beets in.

Once our meal was ready we dug in to all of the delicious flavors. Everything turned out so well - it was the perfect Valentine's meal. I planned to make chocolate fondue for dessert to have with lots of fresh fruit, but neither of us managed to finish our dinners, so instead I packed fruit salad for both of us to bring to work today. Even though I didn't have room for fruit and fondue, I did find some space for a few Lindt truffles. Pat bought me the biggest box of truffles I've ever seen, and way too many other things (including a deep tissue massage and a foot treatment at a spa that I'm going to use after my half marathon at the end of the month!). 

It was a wonderful, relaxing night at home. I wish today was another Valentine's Day so we could do it all over again!

Dinner Preparation:

Beets 
-Peel and halve beets.
-Put in small pot of water and bring to a boil. Cover, reduce heat and let simmer until fork slides into beet easily (about 40 minutes).


Spinach
-Heat olive in in pot over medium heat. Add minced garlic and saute for a few minutes until fragrant.
-Add spinach (we used two bags of organic baby spinach), toss with garlic and olive oil, then cover pot. Stir and check on spinach every few minutes and remove from heat when wilted.


Filet Mignon with Mushroom Wine Sauce
-Pat is the mastermind behind this, so I can't really say much (perhaps he'll write a post about how to make an amazing filet).
-Your pieces of meat should be uniform in shape and size (or as close as you can get). Tie filet with butcher string to make the pieces round. Cover both sides of meat with a salt and pepper rub (coarsely grate salt and pepper on a plate) and sear both sides for a couple minutes in cast iron skillet. Transfer meat (in skillet) to oven and cook until it reaches desired color (about 10-15 minutes for a medium-rare steak)  - flip halfway through cook time. Let sit for 10 minutes before cutting so meat is juicier.
-Mushroom Wine Sauce - heat butter in a skillet over medium heat. Add minced onion and garlic and saute until translucent. Add sliced mushrooms (we used 10 ounces) and cook for a few minutes. Add 1 cup white wine. Continue to cook until liquid reduces to a thicker sauce. If necessary, add a couple teaspoons of corn starch to thicken. Serve on top of filet.


Cheese Risotto
I think this was my third time making risotto, and this is by far the best. In the past I think I've rushed it and kept adding more liquid before the liquid in the pan was fully absorbed. This risotto was rich, creamy, and very cheesy. I knew I wanted to make pink risotto for Valentine's Day (because I'm a big nerd) and planned to use beet water to color the risotto. I decided that I didn't want to add a lot of other things to the risotto and I thought the cheese would be a nice complement to the filet and mushrooms. If you've never made risotto, you really should. It seems hard, but all it is is a lot of stirring, and the end result is well worth it. Pat is usually indifferent about risotto, but he couldn't get enough of this one.

Here's the trio of cheeses I used:


I just need to say that I bought all three of these cheeses for $8 at Trader Joe's! They have the best food and the best prices!

Heat about 3 1/2 cups fat free, low sodium chicken broth in a small pot on the stove. Bring to a boil then reduce the heat and keep it at a gentle simmer.


Heat a large pan over medium heat. Add 2 tablespoons of butter. Once melted, add onion and garlic. Saute for about 5 minutes, until onions are translucent.


Stir in arborio rice and cook for about 2 minutes.


Here the stirring begins! Add 1 cup white wine and continue to stir until liquid is absorbed, about 3-5 minutes.


Ladle about 1/2 cup of the warm chicken broth into the rice pan. Stir until liquid is absorbed. Continue adding and stirring until you've added all of your chicken broth (this takes about 20 minutes). Be sure not to add more liquid until the liquid already in the pan is totally absorbed. And keep stirring!


I added about 1/2 cup of the beet water in at the end to make my risotto pink. This added nice color but did not alter the flavor at all.


Once all liquid has been absorbed you should have nice, thick, creamy risotto. Add 1 tbsp butter (cut up) and some salt and pepper. Stir to combine.


Add your cheese, stir to incorporate, and remove pan from heat.

Cheese Risotto Ingredients

  • 3 tbsp butter, divided
  • 1 medium onion, diced
  • 1 clove garlic, minced
  • 1 cup white wine
  • 3 1/2-4 cups fat free, low sodium chicken broth 
  • 1 1/2 cups arborio rice
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup freshly grated Romano cheese
  • 1/4 cup freshly grated Fontina cheese
  • salt and pepper to taste
*you could use any cheese in this risotto - but this combination is really good!
